    Gluten-Free Grilled Mahi Mahi With Watermelon Pico De Gallo

    4 servings. Free from gluten, dairy, soy, egg, nut, rice and corn.

    Grilled Mahi Mahi Gluten Free

    Ingredients

     4 (6 to 8 ounce) mahi mahi fillets
    Extra virgin olive oil
    Salt
    Pepper
    2 cups diced watermelon
    ½ cup finely diced tomato
    ½ cup finely diced white onion
    ¼ cup finely chopped cilantro
    1 teaspoon finely chopped jalapeno

    Cooking Instructions

    1) Preheat the grill to medium-high heat. Lightly drizzle mahi mahi fillets with olive oil and sprinkle a pinch of salt and pepper on each fillet.

    2) Place fillets on the grill and cook for 3 minutes. Rotate the fish 45 degrees (quarter turn) and cook an additional 2 minutes. Flip the fish fillets over and repeat the "cook 3 minutes, rotate 45 degrees, cook 2 additional minutes process."

    3) To make the pico de gallo, combine diced watermelon, tomatoes, white onion, cilantro and jalapeno in a bowl. Gently stir together.

    4) Serve mahi mahi fillets topped with a generous portion of pico de gallo.

  • Should You Avoid Coffee If You're Gluten-Free?

    Coffee and Gluten

    There have been a few recent reports and blog posts about the effect that coffee has on those of us with celiac disease, gluten intolerance and other gluten sensitivities.  So, being the super sleuthy, investigative journalists that we are here at Gluten-Free Saver, we wanted to provide you with some research and ask your opinion on the matter...

    In it's purest form, coffee does NOT contain any gluten.  So what's the big fuss?

    Well, according to Dr. David Clark's YouTube video on the subject, "coffee cross-reacts with gluten antibodies."  In fact, Dr. Clark claims that the "most common cross-reactor to gluten is coffee."

    What this means in plain English is that your immune system may think that these antibodies are gluten and therefore, your body could respond as if you've ingested gluten!

    Does this mean that everyone who has an intolerance or sensitivity to gluten will have a cross-reaction to coffee?

    No.  And if you're curious to find out if you are cross-reacting to coffee, there's actually a lab test available. However, you'll have to consult with your doctor and get some very expensive lab testing in order to find out that answer.

    Most of the experts out there simply recommend anyone who has celiac disease or gluten intolerance to avoid coffee, it's as simple as that.  This is devastating news for those coffee fanatics out there. But hey, if it makes you feel better, isn't it worth cutting coffee out of your diet?
